Since Tara became a vegetarian, my mother and I have cut back on the amount of meat we eat as well.
In the past many of the dinners I cooked included meat, potatoes, rice or pasta and a veggie because that was what Tara liked (she loves her carbs).
Most dinners now, I prepare something for Tara and we prepare something different for Mom and myself (Mom and I share the cooking). Our meals have become lighter which I like. Soup, salads, or meatless meals!
Mom found this recipe in the USA Weekend insert in the paper. She loves Reuben sandwiches, so this one caught her eye. We have adopted these burgers (without all the Reuben fixings) as a quick easy go to meal. Most times we will just have the burgers, sans roll and a broccoli or coleslaw type salad! I like them with either the mayo/cocktail sauce sauce that is included in the recipe or a little horseradish sauce.
The best part, there are always left overs for me to take to work!
